Chocolate Date & Coconut Protein Energy Bites

I’m currently on another detox/cleanse, very similar to the parasite cleanse I was on a month ago, so my diet is limited to clean, whole foods for the duration. I’m halfway in, and since I can’t have sugar, the cravings are somewhat intense. I can, however, have fruits, which go a long way in helping me stay on track, especially when I’m bombarded by everyone on IG posting their latest pumpkin spice something-or-other baked good.

I love Rx bars and will grab one in a pinch when I’m on the go, but at times, they’re a bit too sweet, so I thought, ‘Why not make something similar, the way I want it?’ While I definitely need to find a shorter name to call them, I am thrilled with how these turned out. They’re very easy to throw together, (about 15 minutes), I also love that they’re portable. I’ll be taking them with me to the desert this weekend for an easy, healthy snack.

Chocolate Date & Coconut Energy & Protein Bites

~Ingredients~

½ cup Pecans
¼ cup Pepitas
¼ cup Shredded Unsweetened Coconut, plus more for coating
20 Dates, pitted and chopped
1 Tbsp Coconut Oil
1 Tbsp Cocoa
2 Tbsp Collagen Powder
1 tsp Cinnamon
1 tsp Turmeric
1 Tbsp Water

~Instructions~

Place the pecans, pepitas, coconut and dates in the bowl of a food processor, and pulse until everything is broken down and mixed thoroughly. Add the coconut oil, cinnamon, cocoa, turmeric, collagen and water and mix until a soft, sticky dough forms. The mix should hold together when pressed.

Divide dough into inch round balls, roll and coat in remaining shredded coconut. Place in the refrigerator for an hour to set.

Makes 20 bites.
